Holla-peño "Tequila" Pops
These ice pops have peach for a bit of sweetness and jalapenos for a spicy surprise. The fusion of sweet and spicy is just right.
- 1- ¼ pounds ripe peaches
- ¾ cup sugar (or an alternative sweetener like Sweeter Stevia)
- 1 small jalapeno pepper, sliced
- 2 tablespoons fresh lemon juice
Directions:
+ First make a simple syrup for the jalapenos (you don’t want chunks of hot pepper in every bite, after all!). Here’s how: In a sauce pan, bring sugar and water to a clear liquid over low heat. Add in the sliced peppers and bring to simmer. Remove from heat immediately and take the jalapeno out of the mix.
+ Place the peaches and lemon juice into the blender, mix to be smooth.
+ Once done, in a small bowl, stir together the simple syrup with the peachy mix.
+Place in molds and let set in freezer.
+Enjoy!
