What is a Silicone Baking Mat?
Silicone baking mats do everything parchment paper does and more. Silicone mats have an ultra-smooth surface that gives cookies more spread, makes bread brown better on the bottom and causes the candy to set faster than on parchment paper and nonstick metal. The difference lies the center of the mat. The center of a silicone mat contains a fiberglass grid that doesn`t retain heat like metal does, so baked goods cook on the bottom at the same rate as they do on the top. You can use silicone mats over 3,000 times with proper care and cleaning.  
Since using Silicone Baking Mats I have not gone back to parchment paper! I love that nothing sticks to these silicone mats. It is reusable for thousands of uses and provides even heat transfer to all baked goods.  The Eco Baker brand is a quality well-made brand of baking mat and holds up well in the oven during regular use. Using it is not difficult. Simply place the Silicone Baking Mat on a baking sheet or pan with the writing side up and do not use grease. Lay your product to be baked or frozen directly on the Silicone Baking Mat.  
I used mine immediately for baking cookies and it worked as described! Note that your recipe baking temperature may need to be adjusted according to your oven. After you`re done using your mat you can clean it with a damp, soft sponge, then rinse with clean water. Shake to remove excess water and dry in open air. A mild detergent or soap may be used if needed. Note that a slight oily residue after washing is normal, as is a slight discoloration. Strongly flavored foods may leave a trace scent on the baking mat. Once clean and dry, store the Silicone Baking Mat on a flat surface.  
Note that you never want to cut or chop anything on your mat or you will end up damaging it. Also, never use a cut or ripped Non-Stick Silicone Baking Mats as the fiberglass mesh material could migrate into the food. You should also avoid using automatic dishwashers, as they may harm the Non-Stick Silicone Baking Mats.
