Chocolate Amour Cake
What You Need:
For The Cake –
+ 3/4 Cup Sugar
+ 1 Stick plus 1 tablespoon unsalted butter
+ 18 ounces bittersweet chocolate (Cacao Nibs Organic are fine too)
+ 6 large eggs
For The Simple Syrup:
+ 1 Cup Water
+ 1 Cup Sugar
How To Make:
+ Grease your pan completely to ensure a smooth removal from pan at the end of baking.
+ Make a simple syrup: Over med-high heat, bring 1 Cup water to a boil, and stir in 1 Cup sugar. Let simmer and make sure sugar dissolves.
+ Set Simple Syrup aside.
+ In a saucepan, melt the 1 stick of butter. Once mostly melted, add in 18 oz. of chocolate. Keep on low heat to avoid burning the chocolate.
+ Add in the 6 eggs and then the simple syrup.
+ Combine until smooth
+ Transfer to pan
+ Place pan in a water bath (use a roasting pan, aluminum is fine, and add water to fill half the sides of the pan)
+ Bake until the cake is solid
+ Top with raspberries and whipped cream — Enjoy!
